RubRub Loaded Corn Elote

Ingredients

  • 4 ears of corn, cooked
  • 4 tbsp RubRub Spicy
  • ½ stick melted butter
  • Neutral spray oil (canola, avocado, etc.)
  • Chopped onions
  • Chopped cilantro
  • ½ cup crumbled cotija cheese
  • ½ cup crushed Hot Cheetos

Serves 2

Directions

  1. In a large bowl, toss the cooked corn with RubRub Spicy and melted butter until fully coated.
  2. Let sit for a few minutes while you preheat the grill to 400°F.
  3. Lightly oil the grill grates with neutral spray oil.
  4. Grill the corn, rotating frequently to avoid burning and to get a nice char.
  5. Remove from the grill and let cool slightly.
  6. While still warm, top with cotija cheese, crushed Hot Cheetos, chopped onions, and cilantro.
  7. Serve immediately.
