RubRub Spicy Kimchi Fried Rice

Ingredients

  • 2 cups chilled cooked rice
  • 3 tbsp RubRub Spicy
  • 1½ cups chopped kimchi (with a splash of kimchi juice)
  • 2 eggs
  • 1 tbsp sesame oil
  • 2 tbsp butter
  • 3 tbsp neutral cooking oil
  • 2 green onions, sliced
  • 1 cup crushed roasted seaweed (optional)

Serves 2

Directions

  1. Heat a skillet over medium-high with butter. Add kimchi + a spoon of kimchi juice and cook until caramelized and golden. Remove and set aside.
  2. Clean the pan; heat oil. Add eggs and scramble gently. Stir in rice.
  3. Season with RubRub Spicy and sesame oil; mix well so every grain is flavor-coated.
  4. Stir in the caramelized kimchi. Mix again.
  5. Serve topped with sliced green onions and crushed seaweed.
